Cherry Crumble Saves the Day!

As a mumma it can be hard to find time to run to the store and stock up on groceries. And when you do sometimes you get too busy and forget some of those things you put in the fridge…(or maybe that’s just a me problem?)
Then one day you open the fruit drawer and realize you forgot about those delicious berries that you bought on sale! Now they need to be consumed quickly or they’ll go to waste. Fear not mumma, that’s where this recipe will save the day!
I love finding ways to save money and time by reusing things and giving them new life. Like that milk that’s about to spoil? Turn it into yogurt! That fruit that you forgot about? Bake it into something delicious! And that’s what this one’s about. Take any berry, apple, pear or pitted fruit in your fridge that’s about to spoil and quickly turn it into something warm, yummy and magical.
Oh and don’t worry too much about the presentation, what it lacks in show it makes up for in taste. I promise! Enjoy!

 

Ingredients:
2 cups pitted cherries
1/4 cup brown sugar
1/3 cup white sugar
1 cup flour
1/3 cup oats
1 stick butter
1/4 tsp of salt
1/2 a tsp of cinnamon

Directions:
1. Preheat oven to 300 degrees Fahrenheit.
2. Butter inside of baking pan (leave out to soften but do not melt.)
3. Make crumble by combining flour, butter, and half the oats. Crumble by hand until you get a sand like texture.

4. Add brown sugar, salt and cinnamon to the crumble and mix in by hand. Set aside.

5. Toss cherries in white sugar and place in baking pan, spread out evenly.

6. Add the crumble to the top of the cherries evenly.

7. Sprinkle the last half of oats over top.

8. Bake in oven 300 degrees Fahrenheit for 45 to 50 min until top begins to turn golden brown.

9. Enjoy a la mode or top with vanilla ice cream! So yummy!

Easy Teething: Oatmeal and Banana Biscuits

Teething…where do I start? Lack of sleep, fighting naps, extra cuddles and lots of crying; oh and baby was uncomfortable too!

I was a mess when my poor babe started teething! If only mummas cuddles could soothe her teething pain! The only thing that seemed to help was a cold washcloth for her to suck on and a hard teething biscuit… which tastes much better than a wash cloth if you ask me.

Instead of heading to the store to buy something I wasn’t sure would help, I spent just about 20 minutes in the kitchen and ended up with something we both could enjoy. These teething biscuits are so tasty she even felt the need to share with her puppy!

Mumma approved, baby approved and puppy approved, I think you’ll approve too!

Ingredients:

1 cup Steel Cut Oats (ground optional)
1 cup All Purpose Flour
2 large ripe bananas
2 tbsp Coconut Oil
1/2 tsp Vanilla
1 tsp Cinnamon

Directions:

1. Using a large bowl add oatmeal, flour, coconut oil, vanilla, cinnamon and bananas. Mash together with a fork until mixture is a soft moist consistency.

2. Roll dough out until about 1/4th inch thickness.
3. Cut dough using cookie cutters or roll into 1 inch thick 2 inch long bars for easy gripping for baby. If using cookie cutters be sure to smooth edges of dough for clean looking biscuits.

4. Bake biscuits at 400 degrees for 15 to 20 minutes until edges starts to brown.
5. Let sit 24 hours to harden (optional.)

All The Pretty Pastries Please!

This one’s for the mummas that love a good presentation and a treat that’s not too sweet. Four way pastries look so pretty with minimal effort and are easy to prep, set aside and come back to as our attention can be pulled in so many directions. I added lots of photos so don’t worry if you’re new to baking, I’ll hold your hand all the way through! If you decide to go for them all at once give yourself about 1.5 to 2 hours for this one.
Baking  two or three sheets at a time depending on the size of your oven is best to conserve time. I’m all about multitasking and finding ways to be efficient in the kitchen as you’ll see! Oh and did I mention the presentation? Break out that bottle of wine you’ve been eyeballing (I’m drinking one of my favorites Apothic Red) and call over some friends… These pastries are worth celebrating!

2 boxes puff pastry sheets
2 cups cream cheese softened
1/2 cup sugar (Click Link To Order)
1 tbs vanilla (Click Link To Order)
1 lb strawberries halved
6 oz blueberries
6 oz raspberries
1 cup chocolate chips (Click Link To Order)
1 cup powdered sugar (Click Link To Order)

 

 

 

Directions:

1. Preheat oven to 400° F
2. Set frozen puff pastry out on counter top to thaw
3. Combine softened cream cheese, sugar and vanilla. Mix into even consistency and set aside

  • Strawberry Diamonds (15 min. makes nine pastries)
    1. Layout puff pastry sheet flat on parchment paper

    2. Cut into ninths (thirds horizontal and then again vertical)

    2. Turn squares diagonal (points on top and bottom) and fold the bottom point to the top point in halves (triangle shapes)

    3. Make two cuts total from just under the triangle tip. One down the left side, then again down the right make sure your cut does not connect all the way through
    4. Unfold the triangle so again points are at the top and bottom
    5. Fold the bottom cut to match the top, then fold the top down to match the bottom, pressing the corners flat so they make a nice diamond shape

  • Blueberry Pinwheels (15 min. makes nine pastries)

  • Raspberry Flowers (10 min. makes four pastries)

    6. Take each of the four corners and fold over the raspberry closest to that corner

  • Chocolate Braid (10 min. makes two pastries)

    2. Cut in half horizontally

    4. Place 4 tablespoons of cream cheese mixture into center between the strips

Nutella Pull-A-Part Heart Recipe

Hey Mummas!

Check out this super easy two ingredient tasty treat for any occasion! This easy to share pull-a-part heart only takes about 30 minutes total including prep time. Perfect for mummas with little to no time to spend in the kitchen.

Ingredients:

  1. 1 box puff pastry (2 sheets per box)
  2. Nutella Hazelnut Spread – Click Here To Buy From Amazon

Directions:

  1. Preheat oven to 400° F
  2. Take out frozen puff pastry and let it sit (counter top) about 30 min so it’s easy to work with.
  3. Trace out large heart shape in parchment paper and cut out shape.
  4. Open box of puff pastry and unfold both sheets to lay flat over parchment paper.
  5. Place your heart shaped parchment paper cut out over pastry and use pizza cutter to trace around the edges.
  6.  Repeat for the second sheet of pastry. So you end up with 2 heart shaped pastries.
  7. Keep extra pastry edges to make other smaller hearts if you wish. Or use cookie cutter to mold other shapes like the flowers I made (see video).
  8.  Spoon out 4-6 tablespoons of Nutella and spread over the top of 1 heart (See Picture Below).

  9.  Place second heart over top of Nutella heart and pinch the edges down so both hearts stick together.
  10. Roll the extra pastry left from your cut outs and cut out a smaller heart to top the center of your pastry (watch video for reference.)
  11. Starting at the bottom, slice UP from the point of the heart almost to the center.  Continue making slices all the way around the heart, about 1 inch apart. (See Photo Under Step 12)

    **DO NOT slice all the way through the heart – make sure each section is still connected to the center smaller heart**

  12. Twist each strip outwards away from each other starting from the two bottom pieces at the tip of the heart. Be sure to pinch the ends together so they don’t pull apart while baking. (See Photo Below As Reference For Step 11 and 12)Nutella Pull Apart Heart

  14. Place heart and parchment paper onto large baking sheet into the oven at 400° F for about 20 minutes until the edges turn a nice golden brown.
  15. Remove from oven and Enjoy!
